Vanilla-Nut Granola

This homemade granola comes together quickly and tastes better than anything you can buy in the store. Plus it is full of fiber, vitamins and minerals and good fats to help get your morning off right.

I often make a large batch of this on Sunday for us to eat throughout the week. We love it with plain Greek yogurt and an handful of berries.

Makes 4-5 cups

Prep Time: 10 minutes Cook Time: 30 minutes


2 cups whole rolled oats

1 cup shredded unsweetened coconut

1 cup mixed nuts- chopped

1/4 cup flaxseed meal

1/2 cup dried fruit of choice

1-1/2 tsp ground cinnamon

1/2 tsp salt

1/2 cup coconut oil

1/4 cup honey (could sub maple syrup)

1 tsp vanilla extract


Preheat oven to 275 degrees.

In a medium bowl, mix together the oats, shredded coconut, mixed nuts, flaxseed meal, cinnamon, salt and any other add-ins that you prefer (raisins, dried cherries, etc).

In a saucepan or microwave safe bowl, whisk together coconut oil, honey and vanilla until melted and combined. Pour over dry ingredients and mix well. Spread evenly on a cookie sheet and bake 25-30 minutes until lightly browned. If you prefer your granola to be in clusters you can bake for 15 minutes spread evenly, then stir and pull the granola together so it slightly overlaps. Then let it completely cool in the pan before breaking into clusters.
